Substitutes for White (wheat) Flour and Gluten based foods

The other day I was reading an article in a magazine that said that 80% of women over 40 have an intolerance to gluten based foods. Being curious about this, I did some checking.

Many people (80% may be a bit high) may have a gluten or wheat flour sensitivity but the only way to really tell if this is true, is to cut out gluten based products and see how you feel because tests don't always tell the whole story.

As people age, their systems also do become more intolerant of many foods. I also discovered an allergy to wheat and gluten are are not one and the same thing. For example, a person with a wheat intolerance could eat rye bread, but a person with a gluten intolerance can't because there is gluten in rye bread.(gluten is a protein found in wheat and it's relatives)

This could be challenging and would mean reading all labels or doing your own cooking, because wheat flour is used as a thickening agent in many products like canned soups, stews and more.

There are many alternatives but sometimes they are harder to find if you don't know where to look. Here are just a few links I found.
