Coconut is one of natures best kept secrets.
Lauric acid found in coconut oil and milk has many healthful benefits to protect us from viruses and infection, and will keep you healthy! I did my own research and came up with a couple good links for you to read more about the amazing benefits of coconut oil and milk!
Coconut oil doesn't start to break down until the temperature gets over 350 degrees, so it keeps its' healthfulness as long as you aren't cooking over high temperatures. I found many ways to incorporate coconut milk into my daily diet, like adding it to my coffee for an interesting flavour, subsitituting it for half the milk in recipes. If you drink chocolate milk, add a little to your glass for added richness.
If you take the coconut milk out of the can and put it in the fridge, the cream rises to the top and the water sits on the bottom.. I have found I have used it to coat fish and chicken before adding a breading.. (great tip.. multi-grain cheerios scrunched up, make a fabulous breading!)
