Cinnamon - A very special spice!
Cinnamon is a wonderful spice and other than that, most people don't place much value on the fact that it tastes great in baked goods or with their hot cider. The neat thing is that cinnamon is extremely healthy for you too.
Cinnamon has anti-clotting abilities, it is an antibacterial, it helps to control blood sugar, boosts brain function and even can be very effective on relieving arthritis when mixed with honey .. and much more!
Cinnamon should be kept in a tightly sealed glass container in a cool, dark place. Ground cinnamon will keep for about six months, while cinnamon sticks will stay fresh for about one year stored this way. Alternatively, you can extend their shelf life by storing them in the refrigerator. To check to see if it is still fresh, smell the cinnamon. If it does not smell sweet, it is no longer fresh and should be discarded. (so I guess my cinnamon that's been in the cupboard for a couple years is probably not terribly fresh)
So go ahead sprinkle cinnamon on your toast, in your cereal, put some on your sweet potatoes or squash, bake pears or apples and sprinkle cinnamon and honey over them or snuggle up with some hot cider with a fragrant cinnamon stick in it.
Even a 1/2 teaspoon daily has health benefits.. if you don't like cinnamon, heck you can even get it in capsules.Here's a couple good resources for you to check out:
